Peel and cube dudhi for Lauki Sabzi with cumin, ginger and green chilli, or simmer it with dal. Grate it for kofta curry or Lauki Halwa, and blend cooked dudhi into soup. If the gourd tastes unusually bitter after cutting, do not use it.
How do I know if dudhi is fresh?
Choose a firm gourd with pale green skin and no soft spots or heavy yellowing.
Do I need to peel dudhi?
Yes. Wash it first, remove the outer skin and cut or grate the flesh for your recipe.
Can I freeze dudhi?
