Fresh Parval, also known as Pointed Gourd, Parwal and Potol, is a small elongated green gourd with pale stripes, tender skin and a mild flavour. Halve or slice parval for Parwal Sabzi with cumin, turmeric, coriander and amchur. Hollow it for a spiced besan or paneer filling, or prepare Bengali favourites such as Potol Posto with poppy seed paste and Doi Potol in a yoghurt gravy. It can also be added to mixed vegetable curries.
Does parval need to be peeled?
No. The skin is edible. Wash it thoroughly and scrape lightly only if your recipe calls for it.
Is parval the same as pointed gourd?
Yes. Parval, parwal, potol and pointed gourd are regional names for the same vegetable.
Can parval be frozen?
For better texture, cook it first, cool completely and freeze in a suitable container.
