Topop Horse Gram (Kulthi) - 500g is a pack of dried whole horse gram, labelled Kulthi and Produce of India on the pictured pack. The small brown pulses develop a hearty texture and a robust, earthy flavour when thoroughly cooked. Use them in kulthi curries, horse gram rasam and other cooked pulse dishes, pairing with tamarind, garlic and warming spices. This is an uncooked dry ingredient, not flour, prepared sprouts or a ready-to-eat meal.
The whole-pulse format adds distinct texture to a curry rather than the smooth finish of a flour-based preparation. Its earthy flavour works with tangy tamarind as well as tomato, coconut and spice temperings. Leave cooked pulses intact for a chunky dish, or mash a portion into the cooking liquid for a thicker sauce. The 500g bag can be measured out for each recipe, with the unused dry horse gram kept tightly sealed.
Sort through the pulses and rinse thoroughly before preparation. Follow the current pack instructions or a recipe specifically intended for dried whole horse gram for soaking, draining and cooking. Cook in sufficient fresh water until fully tender, checking the centres and maintaining enough liquid throughout. For rasam, follow your recipe's method for using the fully cooked pulses and their cooking liquid. If pressure cooking, follow the appliance's liquid requirements and capacity guidance. Do not assume this pack is suitable for home sprouting or raw consumption, and do not eat the pulses raw or undercooked.
